The Mexicano agave (Agave rhodacantha) is one of the most highly valued wild agave varieties used in the production of artisanal mezcal in Oaxaca. It grows primarily in the Central Valleys and the Mixteca region, although it can also be found in the states of Guerrero and Michoacán. It is recognized by its broad green leaves with reddish edges and typically reaches maturity in 8 to 12 years, making it more accessible than longer-maturing wild agaves such as Tepextate (Agave marmorata). Its resilience and ability to thrive in dry, rocky soils have made it an important species for the sustainable production of mezcal.
Mezcal made from this agave is celebrated for its balanced and complex flavor profile. Its aromas often reveal notes of caramel, roasted nuts, and cocoa, while the palate offers layers of spice, earthiness, and a pleasantly subtle bitter finish. Depending on the terroir and the distillation method, it may also develop delicate floral and herbal notes, with a long, satisfying finish that makes it ideal for sipping neat or pairing with rich dishes such as mole, barbacoa, or aged cheeses.
